Aunt Viv's Carrot Cake Recipe

Aunt Viv's Carrot Cake


2 cups sugar
1 1/4 cups oil Beat thoroughly, first three
4 T hot water

Add- 1 1/2 Cups grated or ground carrots, and beat.

Add-
2 1/2 Cups flour
1 1/2 t soda
1/2 t salt
1 t cinnamon

Fold in 4 egg whites beaten stiff
Bake at 350 (her recipe, doesnt say how long)

FROSTING-

1 Cup sugar
1 c evap milk
4 egg yolks
1 t cocoa
1/4 lb. butter (I use less)

Cook about 12 min , stirring constantly. Remove from heat and beat until smooth.
Add 1 1/3 cups coconut and 1 cup nuts.

ALL I WILL SAY IS.....YUM!!!!!!
